Pea and mint omelette with feta cheese

This is a super quick and easy recipe, perfect for when you need to rustle up dinner in a hurry or for a lazy Sunday brunch.

I developed this recipe for Cactus News magazine as part of their Food Heroes project, in which they showcase local producers whose products you can buy at Cactus. This recipe is using organic eggs from farmer Christian Wilhelm. You can read more on his poultry farm here.
