Usually Wäinzoossiss is served with buttery potato mash. But for this quick version I’ve decided to whip up a speedy bean mash, mixing white beans with Gaardebounen – traditionally eaten a lot in Luxembourg. The whole dish gets a crispy dimension with oven-baked kale crisps.
