People always associate pesto with basil and pinenuts, but there are so many exciting veg/nut pesto combinations out there that it’s a shame to always stick with the classic. For this recipe I’ve paired creamy broccoli with the deep flavour of walnuts, which goes really well with nutty spelt pasta. It’s a really quick and easy recipe, perfect for when you need to whip up a quick dinner after a long day at work.
