Luxembourg is a country that loves potatoes, and I can’t imagine any local village fête, BBQ or buffet without a generous bowl of hearty potato salad. Traditionally, potato salad is smothered in a thick coating of mayonnaise and served with Wirschtecher (sausages) – much to the delight of most children, who tend to get a Rëndelchen (a sausage slice) to eat on the spot at the butcher’s counter when their parents shop for meat. To give this classic Luxembourg salad a little twist I have thrown in plenty of fragrant herbs, so the mayonnaise turns green and more refreshing and zingy in taste.
